Why Does Raw Honey Crystallise? (And What to Do About It)

Has your honey turned thick and grainy?

Don't toss it — that's a sign it's the real thing. Here's why raw honey crystallises, and how to bring it back.

You bought a beautiful jar of raw honey, and a few weeks later it's turned thick, cloudy and grainy. Has it gone off? Not at all — in fact, it's a sign you bought the real thing.

What crystallisation actually is

Honey is a supersaturated sugar solution — mostly glucose and fructose. Over time, the glucose naturally separates out and forms tiny crystals, turning the honey thick, pale and grainy. This is a completely natural process. Your honey hasn't spoiled, and it's perfectly safe to eat.

Why raw honey does it more

Raw honey crystallises faster than processed honey for a good reason: it still contains natural pollen and tiny particles that act as "seeds" for crystals to form around. Supermarket honey is heated and ultra-filtered specifically to remove these and stay glassy-clear on the shelf for longer. So if your honey crystallises, take it as a quiet badge of authenticity — it hasn't been stripped back.

How to bring it back to liquid

It's easy, and the trick is gentle heat:

  • Stand the jar (lid off) in a bowl of warm water — not boiling — and let it sit, stirring now and then, until it returns to liquid.

  • Avoid the microwave and never boil it. High heat destroys the very enzymes and aromas that make raw honey special. Slow and gentle keeps all the goodness intact.

How to slow it down

Store honey at room temperature, away from the fridge (cold speeds up crystallisation). A cool, dark pantry shelf is ideal.

You don't have to fix it at all

Crystallised honey is wonderful as-is — many people prefer it. That thick, spreadable texture is perfect on toast or a cheese board. So leave it, spread it, or gently warm it — whatever you fancy.
